The Secret of the 28-lb Trompo Spit
Our signature Al Pastor follows a legendary tradition brought to Puebla by Lebanese immigrants in the early 1900s. We stack 28 pounds of thinly sliced pork marinated for 12 hours in a rich bath of dried guajillo peppers, achiote, and aromatic spices onto a vertical rotisserie spit.
As the meat rotates slowly against open flame, it is topped with a fresh juicy pineapple that caramelizes and drizzles sweet citrus juices down the cone. Sliced hot to order onto double corn tortillas!
